Washington Artisan Cheesemakers Festival (1:00-5:00pm)

Washington Artisan Cheesemakers Festival showcases a wide array of artisan and farmstead cheeses made in Washington. The festival exclusively features local cheesemakers and celebrates the terroir of Washington State. All the cheeses available at the festival are made with milk from animals that graze on local pasturelands and made by artisans who call Washington home. We invite you to meet the cheesemakers, learn about their products and philosophy, and sample some of the finest cheeses made in Washington. In addition to over 20 cheesemakers the festival will also feature artisan foods and beverages from local producers to pair with the cheeses. Admission includes all cheese and food samples and 3 drink tickets.  Beer tastes are one drink ticket each, wine tastes are two drink tickets each.

The event is a benefit for the Washington State Cheesemakers Association (WASCA), a non-profit organization whose mission is to support Washington cheesemakers through education, promotion and collaboration. www.washingtoncheese.org

Cheese Seminar: Beecher’s Handmade Cheese – Remy Martin Cognac – Tease Chocolates Tasting (2:00-3:00pm)

Beecher’s Head Cheesemonger Brian Gilbert ACS CCP®, is passionate about food education and creating unique experiences to showcase where our food comes from and how it’s produced, during the process of tasting.

Brian has chosen a selection of Beecher’s traditional clothbound Cheddar-style cheeses, Remy Martin Cognac samples (V.S.O.P, 1738 Accord Royal and XO) and single origin chocolates from Tease Chocolates. This exclusive tasting will walk you through specific parings, describe the process, tell the history, experiment and discuss the favorite picks.

$35 per person or $30 when purchased with a festival ticket. Ticket price includes cheese, cognac and chocolate samples.

Seminar presentation will take approximately 60-75 minutes.

Presenter Bio: Brian Gilbert

Brian began his cheese career with Mt. Townsend Creamery, creating their storefront. He spent four years making cheese, aging, selling, and educating the Northwest community about cheese. In 2012, Brian came to Beecher’s Handmade Cheese as Head Cheesemonger, training new mongers, creating educational programs, performing events, and opening new storefronts. He works directly with the Cheese counter customers at four Beecher’s locations. - Pike Place Market, Flatiron District in New York, Seatac Airport, and Bellevue Square.  Brian earned his Certified Cheese Professional ACS CCP® in 2013 and a certificate in “Leadership in Edible Education” in 2016 through Educulture & Antioch University. This year Brian is one of three Official Conference Cheesemongers at the American Cheese Society’s annual conference held in Denver.
