Experience the world of American Wagyu with Meat Dudes Evan, Chef Tyler, and Chef Christian in this one-of-a-kind American Wagyu Experience.
Join us for a guided journey through the different styles, genetics, and flavor profiles of Wagyu beef raised across the United States. Not your every day cooking class. You’ll taste everything from rich Full Blood Wagyu to approachable F1 Cross Wagyu while learning how factors like genetics, feeding programs, and ranching styles change the final eating experience.
Throughout the class, the Meat Dudes team will demonstrate how to properly cook Wagyu steak, what to look for when buying Wagyu, common mistakes people make, and the simple techniques that bring out the best in these incredible cuts. Guests will enjoy a curated sampler of premium American Wagyu from the Meat Dudes Butcher Shop along with a paired glass of wine. Additional beverages will be available for purchase (21+).
You may be brand new to Wagyu or already obsessed with it, either way, this class is designed to make Wagyu approachable, understandable, and absolutely delicious.
Evan Carter
Evan Carter is a restaurateur, entrepreneur, and Wagyu educator with more than 20 years of experience in hospitality and food media. He is the founder of The Meat Dudes, a growing platform dedicated to Wagyu beef, meat sourcing, and consumer education, and the owner of Lady Jaye and Little Jaye Bakery in Seattle. Through his restaurants and direct relationships with ranchers across the U.S., Evan has developed a deep understanding of Wagyu genetics, feeding programs, and real-world cooking applications. As co-host of The Meat Dudes, he works closely with leading producers, chefs, and butchers to help make Wagyu more approachable for consumers while bridging the gap between the ranch, the kitchen, and the plate. He has served as a judge and host for the American Wagyu Association’s “Best Wagyu Steak in America” competition and is a featured chef and presenter at CattleCon.
Tyler Palagi
Chef Tyler Palagi is a veteran chef with more than 34 years of professional experience spanning Michelin-starred kitchens, whole-animal butchery, and some of Seattle’s most respected meat-focused restaurants. Trained at Melisse, Tyler has helped open and lead acclaimed concepts including Radiator Whiskey, White Swan Public House, Lady Jaye, and Little Jaye Bakery, while also working directly on farms such as Kurtwood Farms to execute true farm-to-table cooking from pasture to plate. Known for his expertise in smoked meats, butchery, and ingredient-driven cuisine, Tyler was nominated as a “Chef to Watch” by Seattle Met and has appeared on Kitchen Nightmares. Today, he is co-host of The Meat Dudes and a leading voice in Wagyu education, serving as a judge and host for the American Wagyu Association’s “Best Wagyu Steak in America” and presenting at CattleCon to help ranchers and consumers better understand and enjoy Wagyu beef
Christian Rosso
Chef Christian is a South Park resident, proud father, and a recognizable face as the lead cook on the Little Jaye line. With experience leading popular cooking classes at Café Nordo and Luigi’s Italian Eatery, Christian brings both warmth and expertise to the table. He's originally from Jacksonville, North Carolina, and grew up on his family's New York Italian cooking.
